Hi!  Maya here.  Fun fact: I love to cook.  Gathering around the dinner table and sharing laughs over food has always been a huge part of my life.  And, this blog IS supposed to show you all what I love, right?  Well, today I will be sharing with you all a dessert fit for Spring and warm weather!

The dessert in question is, drum roll please, lemon curd-cream with a walnut crumble and fresh berries.  Can I say delicious?

The lemon curd cream sprung to life one day when I was making cupcakes.  Tired of too sweet buttercream, I decided to make a batch of homemade lemon curd and whip up some cream.  Voila!  A star was born.  I mean seriously, this lemon curd cream is an engineering marvel.  You’re welcome.

The walnut crust is oh so nutty and caramel-y and just a teensy bit bitter.  But, it’s so perfect for this dish!  Add some chopped fresh strawberries… magic.

For the Walnut Crumble:

Blend together 1 1/2 cups walnuts, 3 tablespoons of brown sugar, 2 tablespoons of flour, and 4 tablespoons of softened butter in a food processor or blender.  Blend it until the walnuts are chopped and the mixture forms a dough.  Next, shape the mixture into small nuggets and bake in the oven at 350 for 6 minutes or until golden brown.  Once your walnut crust is cooled, chop up the nuggets.


For the Lemon Curd Cream:

There are many recipes on the internet on how to make your own lemon curd!  I am still trying to master it, so I recommend looking up a recipe, then coming back to this one.  You can also buy lemon curd at the store, but homemade is SO much better!  Once the lemon curd is cooled, make the whipped cream.  Whip 1 cup of cream, 2 teaspoons of vanilla, and two teaspoons of sugar until stiff (but not butter!).  Then, fold in the bright yellow curd.


Assembling the Parfaits:

Put a tablespoon or so of the walnut mixture at the bottom of the glass, then pipe or scoop in a dollop of the cream, and place some cut up strawberries over the cream.  Repeat this step once more and dig in!
